7 Meals


Here is our meal plan for this week:

~Salmon steaks with rice pilaf and tomato cucumber salad.

~Lasagna, Ceasar Salad.(I won't have the noodles)

~tuna casserole and a green salad.

~Mushroom/Cheese Omelette with bacon and toast. (I have a lot of eggs to get rid of)

~Rock Cod with seasoned potato wedges and veggies.

~Tacos

~Chicken Fajitas

ooh Chicken Fajitas and lasagne. Could you post your recipe for the tomato/cucumber salad?

I've tried different variations for the tom/cuc salad. I can't find the recipe with the mayo...liked these ones better.

4 roma or vine ripe tomatoes
1 medium cucumber
2 tbsp balsamic vinegar
1 tsp extra-virgin olive oil
1/4 tsp sugar
2 tsp chopped fresh basil
Freshly ground black pepper to taste
PREPARATION:
Slice tomatoes and cucumber thinly and place in a medium bowl. Combine vinegar, oil and sugar. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with chopped basil. Refrigerate or serve at room temperature.
Serves 4

Or:
5 medium plum tomatoes, halved lengthwise, seeded, and thinly sliced
1/4 red onion, peeled, halved lengthwise, and thinly sliced
1 Kirby(not sure what a Kirby is?) cucumber, halved lengthwise and thinly sliced
A generous drizzle of extra-virgin olive oil, about 2 tablespoons
2 splashes red wine vinegar
Coarse salt and black pepper

Dress the tomatoes, onions, and cucumber with olive oil, red wine vinegar, salt, and pepper.
Let stand while you prepare dinner, about 20 minutes. Re-toss and serve salad with crusty bread for mopping up juices and oil.

Scott prefers Rachael Ray's recipe...the 2nd. I think he likes the onions with the salad and red wine vinegar.

Wow! Everything looks great! I need to work fish into our menus - any tips on making good fish? I've not had very much success. :)

i LOVE tuna noodle casserole and my famlily refused to eat it. ergh!! now i'm drooling thinking about it. been craving it for months. guess i'm just going have to make myself a tiny casserole.
