Menu Plan Monday




Well it's that time of the week again. I have to say I really like this Menu planning. Last week our meals were a little up in the air, because I was not feeling well. In the end we did eat what I had planned for the week (swapped the odd day or two!).

Monday: I'm going to try Laura's recipe for Sweet Aromatic Chicken.
I'll serve this with a cucumber and tomato salad.

Tuesday: Pork Chops with a Mushroom Soup sauce made in the crockpot. Served with roasted red potatoes and a balsamic green salad.

Wednesday: Stuffed Peppers. Served with a Greek salad.

Thursday: Spaghetti and meatballs with a Caesar Salad.

Friday: Chicken Fajitas.

Saturday: Meatloaf, mashed potatoes and vegetables.

Sunday: Dinner at my mom's.

Hey Jen...great menu....I'll have to do the tomato and Cuc salad sometime I never think of that one.... I don't even know who won the last AR and now the all stars!!! I watched it it was okay!! I can't believe some of the people who got voted all stars!!TTYL sj

Looks awesome Jenny. How do you make a Cucumber and Tomato salad?? Actually not sure Hal would eat it because of the tomatoes but I certainly would.

EASY TOMATO/CUCUMBER SALAD

1 tomato
1/2 cucumber, peeled
1 cup mayonnaise
1/4 cup sour cream
dill to taste

Dice tomato and cucumber into small cubes of desired size.
Combine all ingredients in a salad bowl.

Refrigerate for at least 45 minutes, then serve.


I also add a little touch of parsley and sometimes do a 1/2 cup of ranch and 1/2 cup of mayo.
Super easy and really good. There are tons of different tomato/cuc salads. I like the creamy ones personally.

Stuffed peppers are one of my favorite things and I never make them. They are soooo good with fresh green peppers from the garden...mmm, I'm drooling!
