Menu Plan Monday

Hello everyone!! It's that time of the week again. Last week I didn't do all of my recipes, but oh well, such is life...I hope to do better this week!! Next week I'm going to try this recipe that Gwen shared...If I didn't have a Roast to use up I would have done this for Sunday.
Here's my menu plan:

Monday: Hawaiian Chicken served over wild grain rice with a Tomato/Cucumber Salad.

Tuesday: Meatballs, with mashed potatoes, carrots and broccoli. Served with Green Salad.

Wednesday: Chicken Fajitas

Thursday: Tuna Casserole served with Salsa Salad.

Friday: Mushroom Pork Chops, roasted red potatoes, mixed vegetables.

Saturday: Beef Stir Fry

Sunday: Shredded BBQ Beef on Buns.

Here's the recipe for the Hawaiian Chicken from I've never tried this,but it looks simple and kind of recipe!!

4-6 Boneless Chicken Breasts
1/2 c. unsweetened pineapple juice
1/4 c. vegetable oil
1 tbsp. brown sugar
1 tsp. garlic powder
2 tsp. dry mustard
2 tsp. ground ginger
1/4 tsp. ground pepper

Combine in saucepan all ingredients except chicken. Bring to a boil, reduce heat, and simmer 5 minutes. Let cool, pour over chicken which has been placed in a shallow dish. Cover and refrigerate for 1 hour or more, remove chicken from sauce, cook on grill about 20 minutes. Baste while cooking.

Sounds like a delicious week Jenny. I love that you incorporate so many salads. We certainly do not eat enough of them. I'll be copying the Shredded beef as well as it sounds so good.

looks like fabulous cooking again...I wish I could get organized enough to plan my menu then I actually might cook something good......
