Menu Plan Monday

Org Junkie has organized a Menu Plan Monday, so I thought I'd participate. Scott and I discussed last night what he wanted to eat for the week, so here's our menu until Sunday.
Monday: Grilled Chicken Breast, wild rice and Zucchini/mushrooms. Served with a simple greek salad.
Tuesday: Spaghetti and Meatballs (going to my mom's house. I just called to ask what she was serving) I am not eating pasta, so I'll have spaghetti sauce with some salad.
Wednesday: Sweet and Sour Spare Ribs served over wild rice with a green salad.
Thursday: Chicken Fajitas
Friday: Marinated Barbecued Steaks served with baked potatos (baked sweet potato for me) corn on the cob and a spinach salad.
Saturday: Beef Stir Fry
Sunday: Leftover Sunday

I thought I'd include the recipe for Gramma Rosicky's Sweet and Sour SpareRibs.

Ingredients:
3 lbs spare ribs cut into 1 1/2 inch squares
1 cup brown sugar
1 cup vinegar
2 cups water
1 1/3 cups ketchup
4 tbsp. corn starch
salt to taste

Instructions:
Mix all ingredients (except the spare ribs!) into a mixing bowl. Use an open pan and stir often. Bake at 250 degrees for 2-3 hours. Serve over rice or noodles.

Jenny that sounds yummy! My friend Annie is having spaghetti and meatballs too...I love it but haven't had it in awhile...guess what I'm going to put on the menu for next week! I love seeing what everyone else is having for dinner. Have a happy day! Laura

Marinating Chicken in It. dressing is such a cheap way to make chicken a little yummier....it's my FAVORITE!!! Hope you all enjoy it!!

All of these menus are making me HUNGRY!!! heeeheee....

i am SOOOOO moving in!! wow. i really should start this whole meal plan thing! but i'm not a good enough cook...
i am going to try that receipe though! that looks amazing!!

Jenny, those ribs sound really good. Do you brown them before putting them in the sauce or just put them in and bake?

I just plop them in and add the ingredients. They turn out so amazing and I freeze the left over sauce to use for a later date for rice or noodles.
