Menu Plan Monday

Here's my 6 meals(eating at my mom's one day this week) for this upcoming week:
~Chicken fajitas(having tonight)
~*Mini Meat loaves(taken and adapted from Kraft Canada "What's Cooking"Recipes)
~Baked Snapper with asparus, zucchini and Jasmine Rice. Served with a Tomato and Cucumber Salad.
~Sweet Onion and Herb Baked Salmon with Basmati Rice and green salad.
~Beef Dip with Coleslaw
~BBQ Steak with Baked potatoes and spinach salad.
*Mini Meat Loaves

1 pkg lean ground beef
1 pkg lean ground pork
1 box of chicken stove top stuffing
1 cup of water
1 can of Spaghetti Sauce or Pizza Sauce
Shredded Mozzarella cheese(however much you want to use)
1 tbsp of Italian seasoning.

Preheat oven to 375 degrees.
Spray the muffin cups with a cooking spray.
Mix meats, stuffing, water and Italian seasoning together. Press into the muffin cups. Make an indentation in centre of the meat and fill with spaghetti(or pizza sauce).
Bake for 25 minutes and then top with mozzarella cheese. Continue baking for 10 minutes.
