Menu Plan Monday


Monday: Chicken Stir Fry
Tuesday: Sweet and Sour Ribs made in the crock pot served over brown rice with a cucumber/tomato salad.
Wednesday: Fondue for me...but Spaghetti and Meatballs for the family.
**Thursday:Scott and I just decided we are going to have dinner in (Chinese food)...I love romantic evenings at home!(Instead of going out for dinner)
Friday:Red Rice with Chorizo sausage(Rachael Ray recipe) with Greek Salad.
Saturday: Homemade Stew and buns.
Sunday: Beef Tacos.

I bought the magazine Everyday with Rachael Ray...it's awesome guys! It has great recipe ideas...awesome articles and I love that the last page of the magazine is "Celeb Fridge". Not sure why that appeals to me so much...You can skip that page Gwen!!LOL
She also has the recommended wines that can accompany each meal! The website is also awesome...check it out!
Anyhow she has a 7 day menu plan section in the magazine.
Here's the recipe for "Red Rice with Chorizo"courtesy of Rachael Ray:
(I'll probably have to double it)
4 servings
Prep Time: 5 minutes
Cook time: 25 minutes

1 tbsp vegetable oil
8 ounces chorizo, sliced 1/4 inch thick
1 1/2 cups red salsa
2 cups thawed frozen corn
One 15 ounce can sliced large black olives
1/2 cup chopped fresh cilantro
1 1/2 cups water

Bottle of Marque de Riscal Rioja Reserva 2001(I hope I can find it!)

1. In a heavy medium saucepan, heat the oil over medium heat. Add the chorizo and cook,
stirring occasionally, until lightly browned, about 4 minutes. Add the rice and stir for 1 minute to coat. Stir in 1 1/2 cups water and the salsa and bring to a boil, stirring once or twice. Cover
the pot and simmer on low heat for 20 minutes.
2. Fluff the rice and stir in the corn. Remove from the heat, cover and let stand for 5 minutes.
Stir in the olives and cilantro.

And the best part:
A bottle of Marques de Riscal Rioja Reserva 2001 to accompany this dinner.

Just to clarify...I'm not sitting at home by myself having a fondue on Wednesday!!LOL...going out.

Thanks for recommending Rachael Ray's magazine,I will have to look at it. I currently enjoy the Taste of Home magazines! The fondue sounds great!

Sounds like a great menu. I watch Rachel Ray when I get a chance, I'll check out her magazine. I think the celeb fridge looks interesting too...
